I’m a bit of a salad dressing freak. I love every sweet, tangy, savory, creamy kind. And what I love even more is making my own. Bottled dressing has been letting me down for decades. I actually can’t even remember the last time I bought a salad dressing at the grocery store, so maybe they’re better now, but I’m skeptical. In any matter, this takes three minutes to make and will have any salad singing with joy. Not to mention what your taste buds will do.
- ¼ cup good quality oil
- 3 T white wine vinegar (or red wine vinegar or champagne vinegar)
- 1 T fresh squeezed lemon juice
- 1 T prepared Dijon mustard
- 1 T pure maple syrup
- ¼ t sea salt
- ¼ t (or less – to taste) of fresh ground black pepper
