When I was little, every couple of years, my mother and her sisters would get together just before Christmas and make Eight Plate Fudge. Eight Plate Fudge was a family recipe that had belonged to my mother’s mother’s mother. And, you guessed it, requires eight plates. It also require forearms like Popeye’s and a few helpers to make it through the really difficult hours when you’re sure the fudge will never be effing finished. While I have fond memories of that melt-in-your-mouth chocolatey goodness that resulted from all that work, my Fudge-in-a-Hurry is thrown together in minutes and while it ain’t quite as good, chocolate and sugar are never bad.

Fast Fudge
  • 1 cup Semi-Sweet Chocolate Chips
  • 3½ Cups Confectioner’s Sugar
  • ½ Cup Dutch Process Cocoa Powder
  • 2 Tablespoons Margarine
  • ½ Cup full-fat Coconut Milk
  1. Lightly grease an 8 x 8 inch square baking pan.
  2. In a large bowl, combine the chocolate chips, sugar, and cocoa.
  3. Place the margarine and coconut milk in a small saucepan, and stir together over medium heat.
  4. Cook the mixture until the margarine has melted, and bubbles just begin to break at the surface.
  5. Remove it from the stove, and immediately pour over the chocolate mixture.
  6. Stir vigorously to melt the chocolate and incorporate the dry ingredients. Continue stirring until a completely smooth mixture forms.
  7. Quickly pour everything into your prepared pan.
  8. Let cool completely before cutting into squares.
  9. Makes about 30 small bites or one huge one, if you’re PMS-ing.
