loaf1My little love is starting to bake with me (which is pretty much my favorite part of parenting so far – watching him stir a big bowl of granola bars in the making or gently mix the wet and dry bowls for a batch of muffins, is truly heart warming to me). Yesterday he asked me if we had any muffins left (he’d polished off the end of a batch earlier that day) and when I told him we didn’t, he asked if we could make banana muffins. The result was this little delicious loaf of bread. He thought the mini loaf pan was hilarious, and the bread wasn’t half-bad either.

Ingredients
Dry
  • ¾ cup light spelt flour
  • ¼ cup almond meal/flour
  • ¼ cup PB2 (powdered peanut butter)
  • ½ t baking powder
  • ¼ t baking soda
  • ⅛ t salt
Wet
  • 1 very ripe mashed banana (medium-sized, or about ½ cup)
  • ¼ cup coconut oil
  • ¼ cup sugar
Instructions
  1. Preheat oven to 350 and grease a mini loaf pan.
  2. Combine wet ingredients very well with whisk or fork in a small bowl.
  3. Combine dry ingredients with fork in a large bowl.
  4. Pour wet into dry and stir lightly just until combined.
  5. Pour batter into greased loaf pan.
  6. Bake in center of oven for 20-25 minutes until a knife or toothpick comes out clean.
