This is an awesome cheese sauce for nachos or mac n’ cheese or queso. It has simple ingredients that you either have on hand or can get easily (I hope!) I like to toss it with our favorite GF pasta shells for an easy weeknight mac n’ cheese (reminiscent of the stuff in the blue box I ate twice a week my entire young life). It’s also great poured over steamed broccoli or cauliflower. If my 18-month-old loves it, so will you.

Serves: 2 cups
  • 1 cup raw, unsalted cashews (or cashew pieces)
  • 1 cup water
  • 1 t dijon mustard
  • 2 T lemon juice
  • ¼ cup nutritional yeast flakes
  • ½ t onion powder
  • ½ t garlic powder
  • ¼ t tumeric
  • ¼ t salt
  • ¼ t pepper
  1. Put everything into a high-speed blender and let sit for at least 30 minutes (up to a few hours) before blending on high for two minutes or until mixture is super smooth and silky (not grainy).
  2. Alternatively, soak your cashews overnight, drain that water, and then place soaked cashews with all other ingredients into a regular blender or food processor and blend for 3 to 5 minutes until smooth and pourable.
